Here are a few recipes for North Carolina Style Barbecue Sauce

Eastern North Carolina Style

From "Barbecued Ribs, Smoked Butts, and Other Great Feeds."

1 pint cider vinegar
2 tablespoons of salt
2 teaspoons ground red pepper flakes
2 tablespoons firmly packed brown sugar

Combine all ingredients, mix well and let stand for several hours before using. You can baste with the
sauce or mix with chopped meat. Makes 1 pint...



Western Carolina Style

1 cup of ketchup
1 cup firmly packed brown sugar
½ cup lemon juice
¼ cup minced onions
1 teaspoon hot pepper sauce
1 teaspoon of Worcestershire sauce

Place all ingredients in saucepan. Bring to a boil and simmer 30 minutes or until slightly thickened.
You can use this as a baste or serve with chopped meat. Makes 1 ½ cups...



Lexington Style Sauce

From "Barbecued Ribs, Smoked Butts, and Other Great Feeds."

1 ½ cup cider vinegar
½ cup ketchup
1 teaspoon salt
½ teaspoon red pepper flakes
1 tablespoon granulated sugar
½ cup of water

Combine all ingredients in saucepan. Bring to a boil, then simmer and stir until sugar is dissolved. Cool
and serve on meat. Makes 1 pint...



Carolina Style Slaw (for your barbecue)

1 ½ medium head of cabbage, shredded (about 9 cups)
¼ cup minced green onion
2 cups mayonnaise
2 tablespoons plus 2 teaspoons of sugar
2 tablespoons of white vinegar
1 ½ tablespoons plus ½ teaspoon celery seed
½ tablespoon salt

In a large bowl combine the cabbage and green onion. In a small bowl, blend the mayonnaise, sugar,
vinegar, celery seed, and salt. Mix well. Drizzle the mayonnaise mixture over the cabbage mixture
and toss lightly to mix well. Refrigerate…


Minced Beef

Yields: 10 servings
Ingredients:
Weights:
Method:
Beef Ground
Onion Chopped
2lb’s
¼ Medium
Cook Beef with onion in its fat
until beef loses its pink color,
Stirring to break apart, drain or
skim off excess fat.



Flour general purpose
Unbleached sifted
2 oz
Sprinkle flour over beef:
continue cooking until flour is
absorbed.



Tomatoes canned
Crushed (may use blender)
2 no. 303 cans
Add tomatoes, salt and pepper
to taste, you may want to add
a small amount of mace or nut
meg, (optional to taste)



Note:
If you desire more of a beef taste add some beef bullion.
Some have asked what spice gives the minced beef it’s distinctive taste.   It’s
either the mace or nut meg.
Minced Beef may be served over toast, biscuits, rice, fried potatoes, or eggs…
